Hellim is a traditional cheese of the Mediterranean and the pride of Cyprus. We use 100% Grade A local cowâ€™s milk to make our hellim, and each hellim block is hand-folded just as it has been for centuries in Cyprus. Hellim is a semihard white cheese with a layered texture similar to fresh mozzerella or firm feta and a slightly salty taste. Due to its higher melting point, hellim can be grilled, fried, or sauteed without melting, and develops a distinctive "squeaky" quality when it is heated.
